Hope Farms proudly raises registered Scottish Highland cattle known for their gentle nature, long coats, and exceptionally flavorful beef. Our animals are grass-fed only—never grain-fed—which means slower growth, richer nutrition, and naturally lean meat. We raise our animals with respect, allowing them to graze freely and grow at their natural pace. Affordable, local, and ethically produced, our Highland beef is available in limited quantities each year.

A Heritage Breed With Superior Quality

Highlands are an old-world Scottish breed known for their ability to thrive on pasture alone. Their slow growth results in tender, flavorful beef that is naturally lower in fat and higher in nutrients than grain-finished cattle. With thick coats for insulation, Highlands don’t require excess fat for warmth, which creates cleaner, healthier beef without sacrificing taste.

Small Batch, High Quality

Because our herd is intentionally small, beef availability is limited. We raise our animals slowly and sustainably, offering beef only when it meets our quality standards. Customers can join our interest list for future availability, custom cuts, or full/half shares when processing dates open.

Raised on Grass, Never Grain

Our cattle are raised exclusively on pasture, eating natural forage year-round. Grass-fed beef has a deeper flavor profile and includes beneficial omega-3 fatty acids, vitamins, and minerals. We do not speed-feed or grain-finish our animals. We focus on animal welfare, long-term health, and letting nature take the lead.
